An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Melt the jaggery with the coconut over low heat until thick, stir in the cardamom and poppy seeds, cool, and shape into 8 balls.
Boil 1 cup water with the ghee and salt, stir in the rice flour off the heat, cover for 5 minutes, then knead while warm into a smooth pliable dough.
With greased palms, shape a dough ball into a cup, place a filling ball inside, pinch pleats around the edge, and gather them at the top into a pointed tip.
Steam the modaks in a steamer for 12-15 minutes until the surface turns glossy.
Serve warm, drizzled with a little ghee.
