An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Make a semi-soft dough with the flour, the 3 tbsp oil, half the salt, and a little water, and rest for 20 minutes.
Sizzle the cumin seeds in a spoon of hot oil, add the ginger and green chilies, then the crushed peas, amchur, and remaining salt, and cook until dry; cool.
Roll small discs, place a spoon of pea filling in each, gather and seal the edges, and flatten gently.
Roll into thick 4-inch kachoris and deep-fry in low-medium oil until puffed and golden on both sides.
Serve the matar kachoris hot with tamarind chutney or aloo subzi.
