Fragrant aged basmati rice layered with spiced meat, saffron-infused milk, and sweet caramelised onions, sealed and slow-cooked in dum style.
Knead the mince with papaya paste, ginger-garlic paste, crushed birista, cashew paste, garam masala, mace, and salt, and refrigerate for 2 hours so the papaya tenderizes it.
With wet palms, pat small portions of the mix into 2-inch round patties.
Shallow-fry the patties in ghee on medium-low heat, 2-3 minutes per side, until dark brown and crisp.
Serve the galouti kebabs hot, melting-soft inside, with warqi paratha and green chutney.
