Tender lentils slow-simmered with warming turmeric, finished with a sizzling tarka of golden ghee, roasted cumin, and fresh coriander.
Knead the besan and wheat flour with methi leaves, green chili-ginger paste, turmeric, sugar, salt, and oil into a soft dough using a little water.
Shape the dough into cylindrical logs, place on a greased plate, and steam for 20 minutes; cool and slice.
Heat a little oil, crackle the mustard seeds, and toss the slices until lightly crisped.
Serve warm with green chutney, Gujarati snack-stall style.
