Tender lentils slow-simmered with warming turmeric, finished with a sizzling tarka of golden ghee, roasted cumin, and fresh coriander.
Drain the soaked dal and coarsely grind it with the dried red chilies and fennel seeds, without adding water.
Add the onion, rice flour, coriander leaves, and salt, and mix into a thick, shapeable mixture.
Portion the mixture into small flat vadas using damp palms.
Deep fry in medium-hot oil until golden and crisp on both sides.
Serve hot with green chutney as a street-side tea-time snack.
