Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Season the mashed potato with a pinch of roasted cumin.
Crack a hole in the top of each puri and stuff with the potato.
Stand the puris on a plate and fill to the brim with the whisked yogurt.
Add a spoon each of tamarind chutney and green chutney.
Dust with the remaining roasted cumin and the red chili powder.
Pile on the sev and serve immediately before the puris soften.
