Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 1 large aubergine (about 500g)
  • • 2 cups whole wheat flour
  • • 1 cup sattu (roasted chickpea flour)
  • • 1 medium onion, finely chopped
  • • 2 green chilies, finely chopped
  • • 1/2 tsp carom seeds (ajwain)
  • • 1 tbsp lemon juice
  • • 3 tbsp mustard oil
  • • 1 tsp salt

Preparation Steps

1
Phase 1

Mix the sattu with half the onion, one green chili, carom seeds, lemon juice, 1 tbsp mustard oil, and a pinch of salt.

2
Phase 2

Knead the flour with water into a firm dough; stuff lemon-sized balls with the sattu filling and shape into littis.

3
Phase 3

Roast the littis over hot coals or in a 200C oven until they swell and sound hollow when tapped.

4
Phase 4

Prick the aubergine and roast over an open flame until the skin chars and the flesh is smoky and soft; peel and mash with the remaining onion, green chili, mustard oil, and salt.

5
Phase 5

Break the hot littis open and serve with the smoky baingan bharta.
