Ingredients

  • • 1 large portion Chips
  • • 2 tablespoon Vegetable Oil
  • • 1 small cut into chunks Brown/White Onion
  • • 1 tablespoon Garlic & Ginger Paste
  • • 2 teaspoons Tomato Paste
  • • 1 teaspoon Coriander Powder
  • • 1/2 teaspoon Salt
  • • 1 teaspoon Chilli Powder
  • • 1/4 teaspoon Turmeric Powder
  • • 1/4 teaspoon Chaat Masala
  • • 1/4 teaspoon Black Pepper Powder
  • • 1 teaspoon Cumin Powder
  • • 1/4 teaspoon Garam Masala Powder
  • • 1 teaspoon Lemon Juice
  • • 1/4 cup Fresh/Chopped Coriander
  • • 2 sliced Green Finger Chillies

Preparation Steps

1
Phase 1

Start by deep frying your frozen chips at around 175 Celsius or oven baking for the time stated on the packet

2
Phase 2

Whilst the chips are cooking heat the oil on low to medium and add the onion chunks to begin to soften for a couple of minutes

3
Phase 3

Add in the Garlic and Ginger paste and allow to fry for 30-60 seconds until the bitterness goes

4
Phase 4

Tip in the tomato puree, watered down with about 4 tablespoons of water to allow it to mix easier and again allow to fry for 30-60 seconds

5
Phase 5

Add the rest of the spices but leave the fresh chopped coriander and some of the green and red chillies for decoration at the end and fry for about 4-5 minutes until the oil starts to separate

6
Phase 6

Turn off the heat, drain the fries, then combine in the pan and stir gently to coat evenly with the masala spices

7
Phase 7

Serve with a sprinkle of fresh chopped coriander and the remaining red and green chillies.
