Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 2 cups cooked rice, cooled and separated
  • • 1 lemon-sized ball of tamarind (about 15g)
  • • 3 tbsp gingelly (sesame) oil
  • • 1 tsp mustard seeds
  • • 1 tbsp chana dal
  • • 2 tbsp raw peanuts
  • • 6 dried red chilies
  • • 1 sprig curry leaves
  • • 1 tsp salt

Preparation Steps

1
Phase 1

Soak the tamarind in 1/2 cup warm water and squeeze out thick pulp.

2
Phase 2

Heat the gingelly oil, crackle the mustard seeds, then fry the chana dal, peanuts, dried red chilies, and curry leaves until golden.

3
Phase 3

Add the tamarind pulp and salt; simmer until the paste thickens and the oil separates at the edges.

4
Phase 4

Fold the cooled rice into the tamarind paste until every grain is evenly coated.

5
Phase 5

Rest for 30 minutes so the rice absorbs the flavours, then serve at room temperature.
