A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Fry the cashews in 1 tbsp of the ghee until golden; drain.
Roast the rava in the remaining ghee over low heat until it smells nutty.
Bring the water to a rolling boil, add the rava in a thin stream, and stir constantly until thick.
Add the sugar and cardamom powder and cook until the kesari leaves the sides of the pan and turns glossy.
Stir in the cashews and serve warm.
