Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Knead the flour, semolina, salt, and 1 tbsp oil with the water into a firm dough; rest 20 minutes.
Divide into small balls and roll into 4-inch circles without dusting flour.
Heat the peanut oil over medium-high heat.
Slide in a puri, press gently with a slotted spoon until it puffs, flip, and fry until golden.
Drain and serve hot with potato masala.
