An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
In 1 tsp oil, fry the fenugreek seeds, dals, and dried red chilies until golden; grind with the coconut into a coarse powder.
Soak the tamarind in 2 cups warm water and squeeze out the juice.
In the remaining oil, fry the garlic cloves until lightly golden.
Add the tamarind water, ground powder, salt, and 1 cup water; boil until the kuzhambu thickens and the oil separates.
Serve with hot rice and a drizzle of gingelly oil.
