An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Soak the rice and the urad dal with fenugreek separately for 5 hours.
Grind both to a smooth batter, mix in 1/2 tsp salt, and ferment overnight in a warm place.
Heat 2 tbsp oil, pop the mustard seeds and curry leaves, and sauté the onion until soft.
Add the mashed potatoes and remaining salt, mix well, and cook 5 minutes.
Spread a ladle of batter thin on a hot greased griddle and cook until crisp and lacy.
Place a spoonful of potato filling, fold, and serve with coconut chutney and sambar.
