An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 600g kingfish steaks
  • • 1 1/2 cups thick coconut milk
  • • 12 shallots, halved
  • • 1 tbsp ginger, cut into juliennes
  • • 2 tsp red chili powder
  • • 2 pieces kudampuli (Malabar tamarind)
  • • 2 tbsp coconut oil
  • • 10 curry leaves
  • • 1 tsp salt

Preparation Steps

1
Phase 1

Fry the shallots and ginger in 1 tbsp coconut oil until soft, then stir in the chili powder.

2
Phase 2

Add the coconut milk, kudampuli, and salt with 1/2 cup water; simmer 5 minutes.

3
Phase 3

Slide in the fish steaks and simmer 8-10 minutes until just cooked, swirling the pan instead of stirring.

4
Phase 4

Drizzle the remaining coconut oil over and scatter the curry leaves; rest 15 minutes.

5
Phase 5

Serve with steamed rice or tapioca; the curry tastes better after a few hours.
