An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Dry roast the dried red chilies, fennel and peppercorns, then grind with the grated coconut to a coarse masala.
Heat coconut oil and fry the shallots and curry leaves until golden.
Add the ground masala and salt and sauté for 2 minutes until aromatic.
Add 1/2 cup water and simmer for 3 minutes until the gravy coats the back of a spoon.
Add the paneer cubes and toss on low for 2 minutes without boiling hard.
Serve hot with dosa or steamed rice.
