An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Fry the onions in ghee until deep golden birista; reserve half.
Pressure cook the mutton with broken wheat, chana dal, ginger-garlic paste, chili powder, 1 tsp salt and the yogurt with 5 cups water for 40 minutes.
Pound and mash the mixture (ghota) until the meat shreds and the haleem turns sticky and glossy.
Cook on low for 30 minutes, stirring constantly, and add the reserved birista.
Serve hot topped with the remaining fried onions.
