A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Melt the jaggery with 1/4 cup water, strain, and let it cool.
Mix the rice flour, mashed banana, coconut pieces, cardamom and jaggery syrup into a thick idli-batter consistency; rest for 1 hour.
Heat an appakaral (paniyaram pan) and add ghee to each mould.
Pour the batter into the moulds and cook on low, turning until deep brown and crusty on all sides.
Remove, drain the unniyappams, and serve warm.
