Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Soak the rice, and the urad dal with fenugreek, separately for 4 hours.
Grind the dal smooth and fluffy, then the rice slightly grainy; combine with 1 tsp salt and ferment overnight.
Roast the chana dal and dried red chilies in a little oil; grind with the garlic and remaining salt into a coarse podi, then loosen with 1 tbsp sesame oil.
Spread the batter thin on a hot griddle, drizzle with oil, and cook until lacy and crisp.
Smear the dosa with the garlic podi, fold, and serve hot with chutney.
