An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Soak the raw rice for 4 hours.
Blend the soaked rice with the cooked rice, grated coconut, and water into a smooth, pouring batter.
Mix in the yeast, sugar, and salt and ferment in a warm place for 8 hours until bubbly and risen.
Ladle the batter into a hot appam pan, swirl to coat the sides, cover, and cook 2 minutes until the edges are lacy and the centre is soft.
Serve warm with vegetable stew or kadala curry.
