A pungent, tangy North Indian specialty infused with robust pickling spices, mustard seeds, fenugreek, nigella seeds, and fresh green chillies.
Dry-roast the fennel seeds, peppercorns, dried red chilies, and grated coconut until fragrant, cool, and grind to a paste with a little water.
Heat the coconut oil and fry the shallots and ginger-garlic paste until golden.
Add the ground paste and cook until the oil separates at the edges.
Toss in the paneer with the salt and 1/2 cup water and simmer for 5 minutes.
Serve hot with rice or dosa.
