An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Knead the flours with turmeric, salt, 1 tbsp ghee, and water into a very soft, pliable dough; rest 30 minutes coated with oil.
Pressure-cook the chana dal until soft; drain, then cook with the jaggery until thick; mash with cardamom into a smooth puran and form balls.
Enclose a puran ball in each dough ball and seal well.
Rest 10 minutes, then roll gently into thin 18cm polis on a ghee-greased surface.
Roast on a tawa with ghee until golden spots appear on both sides.
Serve warm with extra ghee or warm milk.
