Tender lentils slow-simmered with warming turmeric, finished with a sizzling tarka of golden ghee, roasted cumin, and fresh coriander.
Soak the chilies in 3 tbsp vinegar for 30 minutes; grind with the cumin seeds, turmeric, peppercorns, ginger-garlic paste, and remaining vinegar.
Coat the pork in the paste with salt; rest 2 hours or overnight.
Heat the oil and fry the onions until golden.
Add the marinated pork and sear on all sides.
Add 1/2 cup water and simmer, covered, 75-90 minutes until the pork is tender and the gravy is thick.
Serve with Goan poi bread or rice.
