An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Mix the peanut powder, coconut, sesame, goda masala, chili powder, turmeric, jaggery, and salt.
Slit the brinjals crosswise and fill them with the masala; keep the excess aside.
Heat the oil in a pan; add the stuffed brinjals; cover and cook on low 15 minutes.
Add the remaining masala with 1/2 cup water; simmer 10 minutes.
Turn gently until the oil separates; serve with jowar bhakri.
