Knead the gram flour with 2 tbsp yogurt, 1 tbsp oil, and salt into a stiff dough; rest 15 minutes.
Roll the dough into cylinders; boil in 2 cups water for 10 minutes and remove, reserving the water.
Whisk the remaining yogurt with the turmeric, chili powder, coriander powder, and 1 cup of the reserved water.
Heat the remaining oil; crackle the cumin, asafoetida, and dried red chilies.
Pour in the yogurt mixture; simmer 10 minutes on low without letting it boil hard.
Slice in the gatte and simmer 5 minutes; serve with bajra roti or steamed rice.
