An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Knead the gram flour with carom seeds, red chili powder, 1 tbsp oil, and salt to a stiff dough; rest 10 minutes.
Roll the dough into thin cylinders and boil in salted water 10 minutes; cool, then cut into 2cm pieces.
Sear the gatte pieces in a little oil until lightly golden; set aside.
Heat 2 tbsp oil, crackle the cumin seeds and asafoetida; add the yogurt whisked with turmeric, coriander powder, and salt.
Cook on low heat, stirring, until the curry thickens; add the gatte with 1/2 cup water and simmer 10 minutes.
Serve this Rajasthani classic with roti or steamed rice.
