An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Knead the flour with 1 tbsp oil, a pinch of turmeric, and salt; rest 15 minutes, then roll thin and cut into 2cm diamonds.
Pressure-cook the toor dal with 3 cups water until soft; whisk smooth with 3 more cups water.
Heat the remaining oil, crackle the mustard seeds, and add the asafoetida.
Add the dal, jaggery, tamarind pulp, red chili powder, and salt; boil 10 minutes.
Slide in the dough pieces, stirring gently so they do not stick; simmer 20 minutes until tender and thickened.
Rest 10 minutes off the heat and serve hot as a dal dhokli one-pot meal.
