An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Roast the whole aubergine over an open flame or under a hot grill, turning, until the skin is charred and the flesh collapses, 15-20 minutes.
Cool, peel off the burnt skin, and mash the smoky flesh coarsely.
Heat the mustard oil, crackle the cumin seeds, and fry the onion until golden.
Add the ginger and green chilies, then the tomatoes with salt, and cook until the oil separates.
Add the mashed aubergine and cook 10 minutes, stirring, until any water dries off.
Fold in the coriander leaves and serve with roti or paratha.
