Chef's Menu Description

An indulgent artisan dessert, beautifully crafted with premium ingredients and presented with exquisite garnishes for a memorable finale.

Ingredients

  • • 1 cup besan (gram flour), sifted
  • • 1 cup sugar
  • • 1 cup ghee, melted and kept hot
  • • 1/2 cup water
  • • 1/4 tsp green cardamom powder

Preparation Steps

1
Phase 1

Sift the besan, melt the ghee, and grease a shallow tray.

2
Phase 2

Dissolve the sugar in the water and boil to a one-string consistency, then add the cardamom powder.

3
Phase 3

Whisk the besan with a splash of the hot ghee into a smooth, lump-free slurry and stir it into the simmering syrup.

4
Phase 4

Add the remaining hot ghee a ladle at a time, stirring constantly and letting each addition be absorbed, until the mixture is frothy and porous.

5
Phase 5

When the batter turns light and leaves the sides of the pan, pour it into the greased tray.

6
Phase 6

Rest for 10 minutes, cut into squares while still warm, and cool completely.
