A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Warm the ghee in a kadhai, fry the cashews and raisins until golden, and remove with a slotted spoon.
In the same ghee, roast the semolina on low heat, stirring continuously, until it is golden and smells nutty.
In a separate pot, bring the water and sugar to a rolling boil.
Pour the hot sugar water carefully into the roasted semolina, stirring to prevent lumps.
Cover and cook on the lowest heat until the semolina fluffs up and the ghee separates.
Stir in the cardamom powder and fried nuts and serve the halwa warm.
