A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Roast the semolina in 2 tbsp of the ghee over low heat, stirring constantly, until golden and aromatic.
Fry the cashews and raisins in 1 tbsp ghee until golden and set aside.
Boil the water, sugar, and crushed cardamom pods.
Pour the boiling syrup slowly into the roasted semolina, stirring to prevent lumps.
Add the remaining ghee and cook, stirring, until the halwa turns glossy and leaves the pan.
Garnish with the fried cashews and raisins and serve hot.
