A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Roast the semolina in 2 tbsp of the ghee until aromatic and lightly golden.
Bring the water to a boil with the saffron strands.
Reduce the heat, add the semolina in a slow stream, and stir until absorbed and smooth.
Add the sugar and cook, stirring, until the kesari turns glossy and the ghee separates.
Fry the cashews in the remaining ghee, add with the cardamom powder, and serve warm.
