A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.

Ingredients

  • • 2 cups plain flour
  • • 2 tbsp fine semolina
  • • 1/4 cup ghee
  • • 2 tbsp rice flour
  • • 3/4 cup warm water
  • • 2 cups ghee, for deep-frying
  • • 1/2 cup icing sugar
  • • 1/4 tsp cardamom powder

Preparation Steps

1
Phase 1

Knead the flour, semolina, 2 tbsp ghee, and warm water into a soft, pliable dough; rest it 30 minutes under a damp cloth.

2
Phase 2

Mix the rice flour with 2 tbsp melted ghee into a smooth spreading paste.

3
Phase 3

Roll the dough thin, spread it with the rice-flour paste, pleat it into a tight rope, coil the rope into a spiral, and flatten gently.

4
Phase 4

Roll the coil into a thin 6-inch disc, keeping the layers visible.

5
Phase 5

Deep-fry in ghee over medium heat, pressing lightly with a slotted spoon, until crisp and golden on both sides.

6
Phase 6

Drain, dust generously with icing sugar mixed with cardamom, and crush lightly into flakes before serving.
