A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Drain the soaked moong dal and grind to a coarse paste with as little water as possible.
Heat the ghee in a heavy kadhai, add the dal paste, and cook on low heat, stirring continuously, until golden and fragrant and the ghee separates.
Add the warm milk gradually and cook until it is fully absorbed into the dal.
Add the sugar and stir until it melts and the halwa thickens and leaves the sides of the pan.
Stir in the cardamom powder and half the nuts.
Garnish with the remaining nuts and raisins and serve hot.
