A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Dry-roast the moong dal until fragrant and golden, then wash it with the rice.
Pressure-cook the rice and dal with 2 1/2 cups water for 4 whistles until soft and mushy.
Melt the jaggery with 1/4 cup water, strain out grit, and boil the syrup briefly.
Add the cooked rice-dal to the jaggery syrup and stir over low heat until well blended and thick.
Fry the cashews and raisins in the ghee until golden and pour the whole thing over the pongal.
Stir in the cardamom powder and serve hot with an extra spoonful of ghee.
