A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Wash the moong dal and soak it in water for 3 hours, then drain.
Coarsely grind the soaked dal with minimal water to a thick, sandy paste.
Melt 1/2 cup ghee in a heavy kadhai, add the dal paste, and stir continuously over low heat until it turns golden and stops smelling raw.
Add the milk and cook, stirring, until the milk is fully absorbed and the mixture thickens.
Add the sugar and remaining ghee; cook until the halwa leaves the sides of the pan and ghee begins to separate.
Stir in the crushed cardamom and saffron, garnish with the fried cashews and almonds, and serve warm.
