A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Boil the milk in a heavy pan and simmer, stirring continuously, until reduced to about one-fourth.
Add the milk powder and 2 tbsp ghee, whisking so no lumps form.
Add the sugar and the saffron crushed in a teaspoon of warm milk.
Cook the mixture over low heat, stirring, until it becomes a very thick mass that leaves the sides of the pan.
Stir in the cardamom powder and let the khoya cool until warm enough to handle.
Grease your palms with ghee, roll portions into smooth pedas, press a few pistachios on top, and set aside to firm up.
