A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Soak the saffron threads in 2 tablespoons of warm milk for 10 minutes.
Combine the khoya, milk powder, sugar, and ghee in a kadhai and cook on low heat, stirring, until the mixture thickens and leaves the sides of the pan.
Add the saffron milk and cardamom powder and cook for 2 more minutes.
Transfer to a plate and cool until warm enough to handle.
Knead briefly until smooth, divide into portions, and press each into a small disc with a slight dent in the centre.
Press a few pistachios onto each peda and let them set at room temperature.
