A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Rub 1 tbsp ghee into the flour, add the warm milk, and knead into a soft dough; rest 30 minutes.
Combine the khoya, icing sugar, cardamom powder, and almonds in a bowl.
Divide the dough into balls, stuff each with the khoya filling, seal well, and rest 10 minutes.
Gently roll the stuffed balls into 6-inch parathas.
Fry each paratha in ghee on a tawa until golden on both sides and serve warm.
