Chef's Menu Description

An indulgent artisan dessert, beautifully crafted with premium ingredients and presented with exquisite garnishes for a memorable finale.

Ingredients

  • • 1 cup plain flour
  • • 2 tbsp rice flour
  • • 3 tbsp ghee
  • • 1/3 cup water, for the dough
  • • 1 1/2 cups sugar
  • • 1/2 cup water, for the syrup
  • • 2 cups oil, for deep-frying

Preparation Steps

1
Phase 1

Rub 1 tbsp ghee into the flour, add the water gradually, and knead into a stiff, smooth dough; rest it 20 minutes.

2
Phase 2

Mix the rice flour with 1 tbsp melted ghee into a thick spreading paste.

3
Phase 3

Roll the dough into a thin rectangle, spread it evenly with the rice-flour paste, and roll it up tightly into a log.

4
Phase 4

Cut the log into 1-inch pieces, flatten each piece gently, and roll it into a small elongated kaja.

5
Phase 5

Deep-fry the kajas in oil over low-medium heat until crisp and light golden, then drain.

6
Phase 6

Boil the sugar with 1/2 cup water to a one-string syrup, soak the fried kajas in it for 30 minutes, and let them absorb the syrup before serving.
