An indulgent artisan dessert, beautifully crafted with premium ingredients and presented with exquisite garnishes for a memorable finale.
Cook the chana dal with just enough water until soft, then drain and mash it coarse.
Add the jaggery, cardamom, and nutmeg to the dal and cook, stirring, until the puran is dry and leaves the pan; cool and roll it into balls.
Knead the flour with the oil, water, and a pinch of salt into a soft dough; rest it 30 minutes.
Flatten a dough ball, place a puran ball inside, seal completely, and roll it out gently into a thin poli.
Cook the poli on a hot tawa with ghee until golden spots appear on both sides.
Serve the puran poli hot with a spoonful of ghee poured over.
