A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Soak the basmati rice for 30 minutes and drain; steep the saffron in warm milk.
Heat the ghee in a pan, sizzle the cardamom pods and cloves, then add the drained rice and toss gently for 2 minutes.
Add 1 1/2 cups water, cover, and cook on low heat until the rice is tender and the water is absorbed.
Add the sugar and saffron milk, mix gently with a light hand, and cook covered on the lowest heat for 5 minutes until the grains turn dry.
Fry the almonds and raisins in a teaspoon of ghee, fold them into the rice, and serve the zarda warm.
