A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Rub the besan with 2 tablespoons of the ghee and the milk to form moist crumbs, rest for 20 minutes, then sieve to a grainy mixture.
Cook the crumbs in a kadhai on low heat with a little more ghee until lightly golden and aromatic; do not brown.
Boil the sugar with 1/2 cup water to a one-string consistency and stir in the cardamom powder.
Add the roasted besan to the syrup and stir vigorously over low heat until it thickens and turns glossy.
Spread the mixture in a greased tray, press the nuts on top, and let it cool completely before cutting into squares.
