Chef's Menu Description

A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.

Ingredients

  • • 500g red carrots, finely grated
  • • 3 cups full-fat milk
  • • 1/2 cup sugar
  • • 1/4 cup ghee
  • • 1/4 tsp cardamom powder
  • • 1 tbsp raisins
  • • 2 tbsp almonds, blanched and slivered

Preparation Steps

1
Phase 1

Melt the ghee in a heavy kadhai and sauté the grated carrots for 5 minutes until they lose their raw smell.

2
Phase 2

Add the milk and cook over medium heat, stirring often, until the carrots absorb all the milk.

3
Phase 3

Add the sugar; the mixture will loosen, then keep cooking until it thickens again.

4
Phase 4

Stir continuously over low heat until the halwa turns deep reddish and the ghee separates at the edges.

5
Phase 5

Stir in the cardamom powder and half the nuts and raisins.

6
Phase 6

Serve the gajar ka halwa warm, garnished with the remaining nuts and raisins.
