A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Soak the almonds in hot water for 1 hour, then peel the skins.
Blend the almonds with the milk into a smooth, fine paste.
Cook the paste with the ghee in a heavy pan over medium heat, stirring, until it thickens and darkens.
Add the sugar and keep stirring until the halwa absorbs it and turns glossy.
Crush the saffron into 1 tbsp warm milk, add with the cardamom powder, and cook 2 more minutes.
Serve the halwa warm.
