Chef's Menu Description

A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.

Ingredients

  • • 1/2 cup almonds, blanched
  • • 1/2 cup cashews
  • • 1/4 cup shelled walnuts
  • • 1/4 cup dried dates (chuhara), pitted and quartered
  • • 2 tbsp ghee
  • • 1 cup sugar
  • • 1/2 cup water
  • • 1/4 tsp saffron threads
  • • 1/2 tsp dried ginger powder (saunth)

Preparation Steps

1
Phase 1

Warm the ghee in a pan and lightly fry the almonds, cashews, walnuts, and dried dates until they take on a light golden colour; remove with a slotted spoon.

2
Phase 2

Boil the sugar with the water until it reaches a one-string consistency.

3
Phase 3

Stir the saffron threads and dried ginger powder into the hot syrup.

4
Phase 4

Add the fried nuts and dates to the syrup and mix well so everything is coated.

5
Phase 5

Cover the pan and let the shufta rest off the heat for 2 hours so the nuts soak up the syrup.

6
Phase 6

Serve slightly warm in small bowls as a rich winter sweet.
