A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Boil the potatoes until fully soft, peel, and mash them finely while still warm.
Warm the ghee in a pan, fry the cashews and raisins until golden, and remove them.
Add the mashed potatoes to the same ghee and roast on medium-low heat for 8-10 minutes, stirring.
Add the sugar and milk and cook, stirring, until the halwa thickens and the ghee begins to separate.
Stir in the cardamom powder and fried nuts and serve the halwa warm.
