A time-honoured Indian confectionery hand-crafted with reduced milk, fragrant green cardamom, saffron, and toasted pistachio nuts.
Grind the soaked dal with salt to a coarse paste; sauté it in 1 tbsp oil until it leaves the pan, spread it on a plate, cool and cut into squares.
Shallow-fry the dal squares until golden on all sides and fry the potato cubes lightly; set aside.
Heat the remaining oil, add the bay leaf and slit green chilies.
Add the cumin powder and turmeric with 1 1/2 cups water and salt and bring to a boil.
Add the potatoes and cook until tender, then slip in the fried dhokar pieces and simmer 5 minutes.
Sprinkle the garam masala and a drizzle of ghee and serve this dhokar dalna with rice.
