An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Whisk the yogurt with 3 tbsp of the besan, the turmeric and 3 cups water until smooth.
Beat the remaining besan with salt and a splash of water to a thick batter; drop spoonfuls into hot oil and fry until golden.
Heat the ghee and crackle the cumin seeds, fenugreek seeds, ginger, green chilies and asafoetida.
Pour in the yogurt batter with salt and cook 25 minutes over low heat, stirring often, until it smooths into a velvety kadhi.
Add the fried pakoras and simmer 5 minutes so they soak the gravy.
Serve hot with rice or kachori.
