An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Mix half the besan with the onion and 1/2 tsp of the salt, add water to make a thick batter, and fry spoonfuls in the hot oil until deep golden; drain.
Whisk the yogurt with the remaining besan, the turmeric, chili powder, remaining salt, and 3 cups water until smooth.
Heat the ghee and crackle the cumin seeds.
Pour in the kadhi, bring to a boil whisking constantly, and simmer for 25 minutes until thick and cooked through.
Add the pakoras and simmer for 10 minutes so they soak up the kadhi; serve with steamed rice.
