An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.
Fry half the onions in the ghee until deep brown; drain and reserve.
In the same ghee, brown the mutton with the ginger-garlic paste, chili powder, and salt.
Add the broken wheat, chana dal, and 6 cups of water; cook, covered, for 2 hours until the meat shreds and the grains disintegrate.
Pound or whisk the mixture until sticky and stringy, then simmer for 20 more minutes.
Top with the reserved fried onions and the garam masala and serve hot.
